Cocoa is extracted from the dried and fermented seed of the Theobroma cacao tree; these seeds are called cocoa beans. It is this cocoa that is the basis for chocolate and lots of other delicious goods. 

Carob powder is made by grinding the dried pods of the Mediterranean evergreen tree and can be used as an alternative to raw cocoa powder. Both ingredients are packed with goodness and have many applications in the kitchen. 

The origins of cocoa and carob 

Although carob has been cultivated in the Mediterranean since the late 1800s, it dates as far back as Ancient Egypt. In fact, a carob pod represented the word for sweet in Egyptian hieroglyphs and was believed to have been used as a sticky resin when binding mummies. 

Cocoa, however, was first cultivated in ancient South America and was introduced to Europe during the Age of Exploration. It wasn't until the 1850s that it started being mass-produced after the introduction of steam-powered machines. 

Today, our cocoa products are largely cultivated in Europe, although our cocoa butter comes from Ghana. For example, our cocoa nibs come from Germany, our wholesale chocolate drops from The Netherlands and our carob powder comes from Spain.
